Talked to the Chef after, all his food is locally sourced and home made, in the meat and veg and you can certainly taste it. The Chicken breast with stuffing rolled in butcher cut bacon literally burst with flavor, cooked to perfection. And veg cooked better than my Mum ! hot, firm without being over hard, cooked so you can taste the different veg (the oven roasted potatoes were exactly as I like them, very crispy on the outside light and fluffy inside).
